Hi everybody! My name is Francesca and I live in Genoa (Genova in Italian!), where I was born. I have a degree in Geology and licenses as a city guide and hiking guide. I worked for an oilfield company for few years long time ago, but I am working as a guide already since 30 years and collaborate with TBL since more than 10 years! I am always enthusiastic to meet new people and to involve them in the knowledge of my native region, Liguria. Today I will bring you to discover the history and the real taste of 2 Genoese dishes: Focaccia and Farinata...do you know their origins? Each family or bakery makes them a little different... "Focaccia genovese" can be simple or with onions and often Genoese people eat it dipped in cappuccino! Farinata can be enriched also with artichokes or baccalà and it is served mainly in places called "Sciamadda", where a big wood oven still cooks it like in the old times!
I meet guests by the Palazzo Ducale, the main heart of the ancient Genoa Republic: - from here we walk straight in direction of the farinata makers, to enjoy the rustic atmosphere of this ancient dish made with chickpea flour and good local olive oil - we find focaccia in all the Genoese bakeries: crunchy above and soft inside, always with a great addiction of a lot of local olive oil!...the tradition wants the focaccia plain or with onions, but you can find it with pesto, olives, tomatos....you decide which is the best!
