The Yucatan is home to some extraordinary food and some very special people. Several of these are folks I visit and have developed lasting relationships with over the past decade I have spent in tourism in the Yucatan. Rosalia Chay is one such person preparing some very extraordinary food. So extraordinary in fact that she was featured in the Netflix series Chef's Table Season Two. We'll visit with her and spend some time at her home in the Yucatan hinterland. A traditional Mayan village with some photogenic spots and even a cenote. The archeological site nearby, thankfully overlooked by the "officials" in their bureaucratic cubbyholes, is even older than Chichen Itzá, just some ways off. On the way, we will be able to get some perspective on life in the Mayan villages as we drive through several on the road to Rosalia, talk about the historic and social context and how the Mayans and some of their traditions have survived (for the most part) during the past 500 years of colonization.

Rolf was a pleasure to have as a guide. His knowledge of not only the local area but of the Mayan culture was extensive and his sense of humour was much appreciated. Thanks also to Chef Rosalia for a truly authentic and wonderfully tasting meal .
The experience to see Rosalia was exactly as promised. Got to meet her family and learn a lot. Good conversation and good food. Ralf was amazing and I couldn't recommend him more. Gave us some great advice for the Yucatan, geeked out over food options in the area and in Merida. We had some time to kill before Rosalia and he took us into a local Mayan farmer that he met not a few minutes ago and showed us the different fruits and plants that the family grew.

We thoroughly enjoyed this tour. The cooking demonstration was worthwhile. The food was far more delicious than any we have had at restaurants. Ralf is an excellent guide in every way. Since we hadn't yet seen a cenote, he took us to see a couple. He can identify so many plants, which I really appreciated. I very much appreciated his thoughtfulness and insights. Thank you, Ralf!!!
Ralf did an excellent job of educating us about the neighborhoods, history, street art, and villages along the way to lunch by Chef Rosalia Chay. We didn't feel rushed during any part of a day-long trip. The time with Chef Chay was enjoyable; neither of us spoke Spanish, so we relied on the Chef's assistant for an explanation of the process & food. The Chef's family was the team of people assisting with different parts lunch experience, including tortilla making. We highly recommend Ralf & the experience.
