(Theory, Blind tasting Practical Service ) from the UNITED STATES SOMMELIER Association at Wine School at Johnson &Wales University AND accredited by the Court Of MASTER SOMMELIER and Gastronomy. After successfully completing two-years at the professional Hotel Beverage School, I Graduated in 1988. I started my career in the Hospitality Industry on the MADEIRA Island, then I moved to MIAMI to work on cruise ships as Sommelier. I went ahead with my career and became HEAD SOMMELIER , responsible for the development of wine lists and delivery of Wine service. Meanwhile, I GRADUATED from the WINE SCHOOL at Johnson & Wales University in Miami and AWARDED FROM the INTERNACIONAL Sommelier CERTIFICATE Foundation Level, by the United States SOMMELIER Association. I kept working on cruise ships until I decided to move to LONDON to 3 Michelin Restaurant for a while and then to go back to Portugal. Overview of your Porto tour

In the 1920s, several small communities still preserving secret Jewish practices, although with many Christian interference, were identified in Portugal. Artur Barros Basto (1887-1961), a captain of the Portuguese army and Jewish descent, had a key responsibility in the recovery of Judaism in Portugal. He was responsible for the construction of the Porto synagogue - the largest in the Iberian Peninsula - opened in 1939. In 1996, to remember the five centuries-long standing Jewish presence in Porto, a black granite headstone was erected on a wall of the Monastery of São Bento da Vitória. It remembers the Jews relevance in Porto city and their abrupt expulsion and/or forced conversion. In 2003, during some works in an old building located at number 9 of "Rua de São Miguel", hidden behind a wall, a "hekhal" or "aron" - the closet where the Torah was kept - was discovered. Paulo is a fabulous tour guide. We went on a Jewish Heritage tour, where we were able to visit the Jewish History museum and the Orthodox synagogue. Paulo used his connections to get us into these.. essentially for ourselves. We then enjoyed a wonderful port tasting and tour at Cockburn’s cellars, filled by a nice lunch of grilled fish nearby. Paulo is a tru professional, good driver and enjoyable to be with. He takes you to places that are very special. Highly recommended.

Our tour of Jewish heritage sites in Porto was a highlight if our trip. We were able to visit the synagogue, Holocaust Museum, as well as areas in Porto that were previously Jewish settlements during the Inquisition. So interesting. And Paulo was very knowledgeable and had obviously developed ties to the community that allowed us to visit some special sites not open to the public.

Paolo was a great tour guide for our day in Porto. He is very knowledgeable about the city and the Jewish history of Porto. We had an informative and thoroughly enjoyable day with him on the tour and he also arranged for us to do a Port tasting at Graham's.
