I am originally from London but have been living in Bologna for 23 years! I consider myself as much of a local as a local and am obsessed with Italian food and wine and making handmade pasta with a rolling pin. I grew up in London with Italian next door neighbours from Piacenza and always had the aromas of Emilia Romagna's wonderful dishes wafting across the garden fence. Ever since I was a child I always wanted to learn Italian and live in this wonderful country which probably has the world's most diverse culinary traditions and cuisine. I live in the Bologna Hills with an organic butcher a stone's throw away, aromatic truffles up a hill, a wonderful Parmigiano dairy up another hill and surrounded by our local Pignoletto vineyards. My aim is to share Italian, or more specifically, Emilia Romagna culinary authenticity, recount the agricultural history and culinary traditions of the region, and teach guests about how both the peasant and aristocratic dishes and recipes have evolved over time. As I am a professional Sommelier, Parmigiano, Cheese and Traditional Balsamic Vinegar taster and Taste Judge, as well as having certifications in Extra Virgin Olive Oil, Coffee, Gelato and Chocolate tasting, I also enjoy sharing tasting techniques - providing guests with a profound insight into how to truly taste and select the best ingredients and products both here in Italy and when they go home. For my food and wine tours, I love working with my small and excellent suppliers and vendors, who are only too willing to share what they produce with my guests from all over the world. Wherever possible, I select artisan producers who prefer organic or sustainable breeding or production methods. I am hugely environmentally aware, and do my best to use as little plastic as possible during tastings, opting for recycled materials or sustainable wood. This is not always possible - but I try to encourage my producers to do so as well. I am also on a personal mission to promote the wonderful wines of this region which are still relatively unknown. I thrive on sharing the unknown spots and what I know with guests, so my tours are fun and engaging, but given my food and wine certifications and background, also highly educational. Overview of your Bologna tour

In Emilia Romagna, they say that Parmigiano Reggiano paired with Traditional Balsamic Vinegar are a marriage made in heaven. An early morning start to see the whole production process of Parmigiano Reggiano starts with a map of the iconic food products of Emilia Romagna and an overview of the agricultural history of the region. We will head to the countryside between Bologna and Modena to see the artisan production of Parmigiano Reggiano starting with the milk boiling in the massive copper cauldrons, right through to the formation of the 'twin' cheeses and maturation of these golden wheels in the same way as the monks made it 1000 years ago. After tastings of three maturations and other local products, we head off to Modena on a discovery of Traditional Balsamic Vinegar known as 'liquid gold'. In a private villa, you will see and learn about this unique production process that foresees a minimum of 12 or 25 years aging in aromatic wooden barrels. Finally, you will the techniques to tasting both products.

Our day with Helena learning and experiencing this unique region and qualities of Parmigiano Reggiano was the highlight of our trip to Italy. Helena is so knowledgeable and taught us so much. Our experience has given us such an appreciation for the distinct flavors and characteristics of this rich and savory cheese. The tour was personal and bespoke. Our time touring the Acetaia in Modena later that afternoon was equally amazing. We were in awe of the production and long-term aging process of the most delicious Traditional Balsamic Vinegar thanks to Helena. Every guide takes people from Bologna to see cheese being made and learn about balsamic vinegar. Most tours just go to taste. The ones that do go to the production sites are simply providing transportation and the tour is conducted in a group guided by an employee of the producer. I was a bit nervous when booking this tour because it was more expensive than many others. When I learned from reading other reviews of the difference in her tour experience, I opted to take a chance. We were rewarded by this choice; you should consider it as well. Helena made sure we got to observe the cheese making process from the time the milk was poured into the vat, until the wheels of cheese were ready for tasting. We will never be able to taste US domestic grated cheese without our tastebuds reminding us of what we experienced visually and what we tasted with her on this tour Then off to a producer of traditional balsamic vinegar to study its production, seeing barrels dating back to the 1500's, and meeting the owner, with whom she has a long personal relationship. Helena herself is on a tasting panel used by the cooperative to grade the traditional balsamic product. We did not go to the back of a commercial merchant's shop, where fancy bottles and marked up prices disguise vinegars of inferior products and the goal is sales, not education. Helena was able to captivate my wife and I, as well as our 14 y/o grandson who accompanied us on this trip

We had an amazing parmigiano and balsamic tour in Bologna with Helena. It was truly one of the highlights of our trip! Her passion for the region, food, and producers came through in every part of the day. She was incredibly knowledgeable, warm, and engaging, and took the time to thoughtfully answer all of our questions. The tour was both educational and fun, even for our four teens (ages 13–16). Helena also arranged a van for our group of eight, making the entire experience seamless and stress-free. We highly recommend this tour to anyone visiting Bologna.
