Your journey begins in the heart of the traditional village of Megalochori, at the historic Gavalas Winery—one of Santorini’s oldest, family-run estates. There, you’ll explore traditional winemaking methods passed down through generations and sample 4 exceptional wines made from native grape varieties such as Assyrtiko, Aidani, Mandilaria, and Mavrotragano. Next, you’ll head to the iconic Santo Wines, a celebrated wine cooperative perched on the caldera cliffs with panoramic views of the Aegean Sea. Here, you’ll enjoy a guided olive oil tasting, where you’ll dive into the story of olive cultivation on the island—from ancient times to modern production. Sample three Santo Roots olive oils plus one additional variety, paired with apple slices, bread, and a bruschetta topped with olive oil, tomato paste, and prosciutto—a perfect bite that captures the essence of local flavor.
