There, you’ll explore traditional winemaking methods passed down through generations and sample 4 exceptional wines made from native grape varieties such as Assyrtiko, Aidani, Mandilaria, and Mavrotragano. Next, you’ll head to the iconic Santo Wines, a celebrated wine cooperative perched on the caldera cliffs with panoramic views of the Aegean Sea. Here, you’ll enjoy a guided olive oil tasting, where you’ll dive into the story of olive cultivation on the island—from ancient times to modern production.
