Hi, I'm Robert! Food and culture have been parts of my personal and professional life since I began working my way through cookbooks at the tender age of 12. I've worked with some of the greats in all aspects of food, travel, and hospitality. I've won global awards as a food writer/editor for magazines and publishers like Travel+Leisure, Food&Wine, Wallpaper, and Phaidon. I've designed and conceptualized restaurants in over a dozen countries for celebrity chefs and luxury hotel brands like W, Westin, Mandarin Oriental, and Shangri-La. I've done research and development with Michelin 3-Star chefs such as NYC's Jean-Georges Vongerichten, as well as Top Chef and James Beard Award-winners. This unique experience is a hybrid luxury tasting + private class of artisanal French wine varietals matched to a 3-course tasting of dishes inspired by Montreal's global food cultures - a market-driven mix of Asian, Jewish, Caribbean, Italian, Portuguese, or Middle Eastern. The guide & hosting Chef is an award-winning food writer (Gourmet, Travel+Leisure) & Oxford-trained food scholar who has worked with Michelin-Star chefs and Top Chef winners around the world. The dining site is a historic 1800's building in the famous Old Port. Fish, meat, and provender will be mostly Canadian-sourced. Guests will learn sauce techniques, flavor development, and how to plate a dish. The meal will then be served as a tasting menu with Riedel glassware, Laguiole knives, and many other luxury accoutrements you'd find in the top restaurants in Montreal - the difference being you get to own this one for the day. ·The class includes a Food Culture Introduction: The global cuisines, influences, flavors, and communities of Montreal. ·ADDITIONAL OPTION: For extra cost, there is a 3-4 glass Artisanal Wines flight. ·What's next is the Pro Cooking Introduction: Chef vs. domestic cooking. Recipe following, techniques, components. ·We will then proceed to make a 3 course meal.
