My name is Pambos and I was born in Limassol, Cyprus where I live with my wife and two children. I'm a United World Colleges alumni (AC 88-90), with further studies in Business Marketing. I'm a certified Sommelier with Professional Sommelier Diploma and a founding member of the Cyprus Sommelier Association. Also involved with the Cyprus Wineries Association, where I'm considered a trustworthy ambassador of the Cypriot Wines and Viniculture. I have been involved in the gourmet food and fine wine industry for as long as I can remember. Thus I have deep roots and connections with most producers on the island. Back in 1996, when I first got in the business, I was sourcing European delicatessen food and wines for import to the island. it is easy to comprehend the knowledge and experience gained by numerous trips to the country sites of Italy, France and Greece in search of the finest gourmet products. As a sommelier I offer services to independent restaurant operators, wine professionals and local wineries. I organise and guide events and trips for wine enthusiasts, visitors and residents to local wineries. Cyprus has a long history in wine making. As a matter of fact, archeological discoveries have shown that wine was produced on the island some 4500 years ago, putting Cyprus on the map as the oldest wine producing country in the Mediterranean. Nowadays the industry is radically changing, with modern winemaking techniques and practises being introduced and more work done in the vineyards by well equipped young professional wine makers. As one of them stated a few years ago: 'Cyprus produces New World wines on an old world soil!' Last time I checked there were 106 registered wineries on the island, of which some are active and some not. Some accept guests and some don't and only 54 of them are exposed in the retail market. Very easy to get lost and misled unless you have some inside information from someone who is constantly visiting the wineries and their vineyards and can open a few doors. I get great pleasure each time I join in with my guests for their tasting experiences, whether a simple wine sampling at the Tasting Room, a food and wine matching dinner at a restaurant or a multi-day trip through numerous vineyards and endless sipping and spitting in the wineries' cellars. I'm always willing to take on any challenge by guests. My guests enjoy the privilege that comes from visiting sights with a connoisseur, an industry insider, meet and talk to producers, find out little secrets, taste their wines in extraordinary ambiences and in general be guided into a dimension where they wouldn't get otherwise. Starting with a walk around the Medieval Castle grounds we head for a coffee shop nearby to enjoy our morning coffee, the way locals do. You will be introduced to the *ritual* of having a Cypriot coffee. From cooking and preparing tips and tricks to visualizing your future in the sentiment shapes at the bottom of the cup. Lots of anecdotes and stories about the local culinary culture and life style. Whatever route we take we will end up at the lunch place. A little kebab shop that was founded back in the early 1900's! This is where the fun begins! Starting with an aperitif based on local distil we will order local charcoal grilled Cypriot street food which we will share in meze style. The ritual this time involves a Libation, therefore your meal is accompanied by a local wine-based cocktail!. . . and more story telling ;)
We meet at Limassol Medieval Castle Square. At the ice-cream shop 'Gellatissimo' and during introductions I'll treat you to a scoop of ice-cream. Your choice of flavor will tell me a couple of things about you. We then walk through the allies of the historical center of Limassol passing by the mosque, the cathedral of Ayia Napa, the Municipality, the old market square and a few more landmarks based on your interests. During the walk you will get the opportunity for some shopping if you want or visit local artists' studios that are on our way.
