I believe the best way to understand a place is through its food, its people, and its stories. As a chef, I’ve spent my life chasing great cooking and authentic experiences. Once, I arrived in Japan to cook for an official Colombia–Japan government dinner, carrying a suitcase packed with raw vegetables and artisanal ingredients. A Japanese officer asked whether everything complied with agricultural regulations. I told him, “If you open it, you’ll have to confiscate everything.” He looked at me, then at the suitcase, and said, “Then I won’t open it. Welcome to Japan.” I knew right then I was going to love Japan. Back in Colombia, I founded the Gastronomic Congress of Popayán, helping the city become UNESCO’s first Creative City of Gastronomy in 2005. At one festival, we brought legendary cowboys from Colombia’s eastern plains. They cooked and played music for 72 straight hours. Eventually, we had to take them into the streets to give away steak dinners because they simply refused to stop. Today, my passion is Jerez. I’m a master blender and the creator of a premium rum crafted here, and I’ve come to know Jerez not just as a destination, but as a place to live, eat, drink and share. I don’t want to show you the Jerez from a tourist brochure. I want to show you the Jerez, Cadiz and bay area I share with friends: unexpected corners, extraordinary food, great wines, local characters, and stories you won’t find in a guidebook. Come hungry. Join me at my own vineyard in the heart of the Jerez countryside for Explosion of Flavors, an innovative tasting method I created as a chef and Master Blender. I personally select and prepare six courses, pairing them with four unique Sherries from Pago Macharnudo and two of my own rums. From the moment I pick you up, I will be your private driver, chef, and sommelier, taking you into the Jerez countryside and guiding you through a unique gastronomic journey. The wines are exceptional, aged for many years and not commercially available, offering a rare opportunity to taste expressions that few people ever experience. My innovative pairing method allows you to discover aged wines and spirits like a professional, revealing layers of aromas, flavors, nuances, and aging characteristics. The menu is adapted to your tastes, dietary requirements, and allergies. Everything is cooked, paired, and presented personally by me. Your Jerez De La Frontera tour itinerary
Pick-up: I will pick you up at your accommodation or at any location you prefer within the Jerez area. -Drive to the vineyard: We travel into the Jerez countryside to my vineyard, located just 4 km from the center of Jerez, approximately 12 minutes away. -Vineyard walk: We explore the vineyard and its surroundings, discovering the terroir, the vines, and the different products and natural resources of the land. -We visit the vineyard’s winery, where I explain how Sherry is made, from the vineyard to the different stages of its unique aging process. -Gastronomic tasting: We move to the dining room or terrace, depending on the season, for the Explosion of Flavors paired tasting. -Return to Jerez: Once the experience is complete, I will drive you back to Jerez. A completely personalized experience: The itinerary can be adapted to your interests and pace. We can make additional stops or visit places you would like to see along the way, whenever time allows. You decide the pace.
