A wonderful experience of exploring the world of Sherry and tasting 6 different types of wine pairing with some local products. The perfect day. The Sherry wine is worldwide known. But not everybody knows what is its history, where is produced and the variety of grapes we used for it. The thing is that not only the city of Jerez de la Frontera has the honour to grow, produce, age and enjoy these wines. Chiclana de la Frontera is another village of the province of Cádiz which is part of, what in sherry language is called, the "Sherry Frame". It is in Chiclana where we could find one of the best Bodegas of the province: "Bodegas Collantes", with more than 180 years of Family tradition. Bodegas Collantes works in two ecological farms where employment is promoted to people from the local area or from neighbouring towns. A total of 39 hectares where the local grapes variety grows happily waiting for you to visit and, after learning how they evolve into a beautiful wine, taste them.
We will visit "Matalián" vineyards, one of the two farms Collantes has. This farm is located towards the Sierra of Cádiz. This makes their soils more clayey and high in iron content, giving it that unmistakable red colour. In this farm they are also recovering a variety of native grape called "king grape" that is responsible for the production of its best fino wine. After the stroll through the vines and learning some important points about the gape growth and harvest, we will enjoy a magical part of this experience: An amazing wine tasting at the vineyard where we would be able to see the Atlantic ocean and the sunset while listening to live music. we will taste 6 different types of sherry accompanied with 6 different paring (local products). After the taste, we will happily return home. THE STARTING TIME OF THIS EXPERIENCE DENPENDS ON THE SUNSET TIME.
