Live-streamed from my kitchen in Ravenna, I'll share with you the secret recipe of my grand mother in an on-line cooking class


Anyone who comes to visit my city cannot leave without having tried a piadina or a crescione.
As street food it is usually sold in small green and white kiosks along the main roads and in the beach villages on the Adriatic Coast or sometime in taverns and osterias to replace bread.
Actually It is a kind of bread, circular like a pizza but without yeast, it's perfect to be combined with cold cuts like parma ham, salami, and cheese like pecorino or squacquerone, a local creamy cheese.
If you fold a piadina in half and fill it with tasty ingredients it will become a Crescione, very similar to a calzone, but you won't even need a oven to cook it!
And what about if you deep fry the dough?
The combinations for the refilling are numerous and it is a very versatile dish.

This easy virtual cooking class allowed you to experience the genuine taste of the most popular appetizer of my Region, Emilia Romagna.

Itinerary

Following my instruction and mixing 5 simple ingredients you will obtain a soft dough, very smooth to handle.
The dough need to rest about 15 minutes and in the mean time we will prepare the ingredients to refill the cresione. Then with the help of a rolling pin we will roll out the dough to obtain a thin and circular shape of about 20 cm of diameter.
The cooking time is very short, it takes a little bit more to cook the crescione. The deep fried version of piadina is even faster.

fat pork (75 grams)

seasonings for crescione (1 sweet and 2 savory):
2 cloves of garlic
spinach (frozen are perfect, if you prefer fresh one please clean it before the live coocking class)
1/2 can of tomato sauce (not ketchup please)
1 mozzarella
Basil leaves (fresh are better but also dry are ok)
origano (not primary)
oliv oil

Nutella or a chocolate cream

Seasonings for piadina are totally up to you, I usually suggest:
fresh cheese or aged cheese and roquette
crudo ham
salami
sausage and onion
mortadella
