Juan Carlos was a wonderful guide, helping us to understand what the city of Santiago is all about, its history, development and current situation. In addition he clued us in on very local things, such as the delicious "Mote con huesillo" (a refreshing concoction made with husked wheat, dried peach in a sugar/cinnamon drink).
